Lunch of the Week - Cauliflower's On The Phone

Serves 4

Ingredients

-  1kg cauliflower  -  70ml extra virgin olive oil  -  2 red onions (sliced)  -  1 clove garlic (grated)  -  30g raisins  -  100ml lemon juice  -  1tbsp honey  -  salt & pepper.

Spices

- 1 tbsp turmeric fresh (grated)  -  1 tbsp ginger fresh (grated)  -  1 tsp toasted cumin  -  1 tsp toasted coriander seed  -  1 tsp ground turmeric  -  1 tsp ground cinnamon.

Method

Break off the exterior leaves of the cauliflower, toss in salt & pepper and 20ml oil, then lay on a lined baking tray. 

In a separate tray, cut the cauliflower into florets and roast in salt & pepper and 30ml oil on 150°C for 40 minutes until nice and crispy. You will need to toss them halfway through cooking so they become evenly soft and crispy. 

Meanwhile prepare your onion mix.

Heat 20ml oil in a pan on a medium heat. Once the oil is hot and sizzling, chuck in the onions and fry for 10 minutes until they go puffy and golden, then turn the heat down and add the raisins and the spice mix. Cook for 25 minutes until very soft. 

When the cauliflower has finished in the oven add the onion and spice mix into the tray. Then drizzle lemon juice and honey over the cauliflower.

Put both trays (leaves and cauliflower) in the oven and bake for 20- 25 minutes until the cauliflower caramelises and the leaves are soft and crispy. 

Serving suggestions: Add coriander, yoghurt and chilli jam.
